Rugby SOUPE recipe

Ingredients & Prep
6 - 8 white onions: Chop rough
6 - 10 potatoes: Chop rough
1 - 2 sweet potatoes (Yams): Chop rough
1/2 bunch of celery: Chop fine
6 - 8 large carrots: Chop rough
200 grams of barley
60 - 80 oz can of diced tomatoes
1/3 cup Italian seasoning
Salt
Pepper
90 ml chicken stock/bouillon
6 - 7 litres of water
Olive oil
Directions
STEP 1

Heat olive oil, onions, celery, salt, pepper & Italian seasoning in pot.

Cook for 5 - 10 minutes until onions are translucent.

Stir frequently.
STEP 2​

Add tomatoes, water, barley, chicken stock to pot and bring to a boil stirring occasionally.

Simmer, uncovered, for about 20 minutes.
STEP 3​

Add potatoes, yams and carrots and bring to a boil. **feel free to substitute any veggies.

Simmer 20 - 25 minutes until all veggies are tender.
STEP 4​

CAREFULLY transfer soupe to bucket and let cool.
Ranch Pasta Salad Recipe

Ingredients

2.5 kgs pasta (Rotini)

Ranch seasonings in equal parts (3 Tbsp each: Salt, Pepper, Onion Powder, Garlic Powder, Dried Dill and Dried Parsley)

2 cups oil of some sort, olive preferably

4 Sweet potatoes (small dice)
-
4 Bell peppers (small dice)
-
4 Large onions (small dice)
-
4 Cucumbers (small dice)

1 Bunch of celery (small dice)

1 Cabbage (Finely chopped)
Directions

Peel and dice sweet potato
-
Boil water for pasta
-
Once water is at a rolling boil, chuck in pasta and set timer for 4 minutes.

After 4 minutes, toss in sweet potato with the pasta for an additional 5 minutes

Drain pasta and sweet spuds

Once relatively cool, mix in the rest on ingredients (I do that in sections in the bucket with a large wooden spoon)
